National Vegetarian Week 2011 – Go Meatless Tonight

Ever thought of going vegetarian? Well here’s your chance to test the waters.

This week (May 23-29, 2011) is National Vegetarian Week 2011.  Created by the Vegetarian Society and celebrated since 1992, this week gives people worldwide the opportunity to give vegetarianism a go.

Try this tasty recipe courtesy of registered dietitian, Tina Ruggiero, for a meat free option the whole family will enjoy.

Tina’s Basmati Rice & Yellow Lentil Salad
Serves 4

INGREDIENTS
2 cups basmati rice, cooked and cooled
1 cup yellow lentils, cooked and cooled
1/4 cup fresh parsley, chopped
1/4 cup fresh dill, chopped
1/4 cup fresh mint, chopped
1/2 cucumber, seeded and chopped
Juice from 1/2 lemon
1/2 cup grape tomatoes, quartered
1/4 cup garbanzo beans
1 tsp. cumin
3 Tbl. Olive oil
Salt and pepper to taste

PROCEDURE

1. Mix together all the ingredients except the olive oil, salt and pepper.
2. Drizzle salad with olive oil and toss gently.
3. Season with salt and pepper to taste.
4. Serve chilled.
